CROSSROADS

Serve consistent, innovative, high

quality cocktails at high volume

As two former Top50 bartenders and the authors of Bubbles: A Guide to Carbonated Cocktails, Crossroads Consultancy designs, installs, and runs educational seminars for custom cocktail on tap systems - so you can get more liquid to lips while maintaining the craftsmanship and quality of your brand.

Proudly Supporting Industry Leaders

  • Service slows down during peak hours

  • There’s more room for error and inconsistent serves

  • Inefficient prep time and waste eat into margins

  • Higher labour intensity recipe during service

On average, it takes over 1 minute to build and serve a cocktail - this costs you in more ways than one

    The Morris

    Manchester, UK

Listed on the Top 50 UK Cocktail Bars in their first year of operation, The Morris is a three-level venue with fantastic cocktails on tap.

We consulted on the draught dispense system as well as provided extensive, two-day training two the team on everything force-carbonation prior to the venue opening the doors to public for the first time.

  • Bright illuminated sign on a black surface reads: 'WORLD CLASS LEBANON 2026' against a brick wall with industrial lighting and ventilation duct overhead.

    Diageo World Class 2026

The World Class Competition, presented by Diageo, is widely recognised as the most prestigious bartending competition in the world.

For the 2026 edition, we were commissioned by the Diageo MENA team to design and judge a bespoke carbonation challenge for:

    Quarter Finals – Dubai, UAE

    Semi Finals – Beirut, Lebanon

What many perceive as a complex, intimidating technique became accessible, structured, and creatively liberating. Within a single day, participants moved from theory to confident execution, producing drinks with sharper flavour definition, refined texture, and stronger overall balance. Even more importantly, the system allowed them to focus on hospitality and storytelling instead of struggling with mechanics.

This is the essence of our service.

    TapLine

    Dubai, UAE

An all-tap cocktail concept, appearing as a speakeasy below a hotspot steakhouse in DIFC area of Dubai.

We visited TapLine to improve carbonation consistency and dispense quality by troubleshooting existing problems, recommending equipment and service improvements and training the team on science, practicalities and good practices regarding formulating, batching and carbonating optimal kegged cocktails.‬

  • Campari Academy

    Campari Academy

London, UK / Athens, GR / Berlin, DE / Edinburgh, UK

We do not deliver generic carbonation seminars. We build tailored programs aligned with brand identity, product portfolio, and educational objectives. By combining scientific clarity with practical application, we enable bartenders to immediately translate knowledge into better drinks.

For Campari Academy, that meant empowering industry professionals to rethink flavour construction through carbonation, using the brand’s own products as the foundation.

It was a focused, high-level educational experience that reinforced both product versatility and technical confidence in a single day.

This project demonstrated how our service adapts seamlessly to brand-led educational environments.

  • Modern hotel lobby with seating area, large windows, brass pendant lights, wood accents, and a reception desk with bottles of alcohol displayed.

    Angel’s Envy

    Louisville, KY, US

Following our recognition as Top 4 Finalists for Best Bartending Book of the Year at the Spirited Awards during Tales of the Cocktail 2025, we were invited to Kentucky for a brand-focused activation.

Shortly after the event, the brand team was responsible for a high-volume brand activation focused on maximising liquid-to-lips volume. Applying the carbonation systems and workflow strategies we implemented, they successfully delivered a level of output the brand had not previously achieved with a single operator handling service.

The efficiency gained allowed him to shift brand team’s focus where it mattered most: engaging directly with consumers, communicating the brand story, and highlighting the craftsmanship and quality of Angel’s Envy Bourbon.
